Dokert over at KLOV can probably help you out. He does a lot of Williams board support, and can probably supply what you need. Here's the list of things he can sell you:

--- Quote ---Also, for a little update on Robotron, I'm going to be using the jrok board with the second cocktail (the Robotron), at least until I find a real Robotron board set down the road. (those things are impossible to find.)

So I take it you'll be adding buttons to the Control Panel then? For games like Joust and Sinistar? Or are you just going to have the board in there for the dual stick games?
--- Quote --- I've also decided to use a newer power supply in that one too. (like I mentioned above) And I can't figure out how I'm going to fit a monitor in there. I guess I'll go in more detail once the defender is done. So close..

Are you going to get a switcher?
If you're going to get a new PS, perhaps this might be a good option? It comes with the Ram upgrade (info here) as well...if you were planning on upgrading the RAM anyways, this might be a good deal for you.
RayB:
You're in the similar boat as I was. I bought all the boards, including a Defender that I figured I can adapt to run Robotron, read a LOT of tech info here: http://www.robotron-2084.co.uk/ (so many board revisions and variations to keep track of!)
...then figured just get a JROK board.

Oh wow! That's exactly what it is! Thank you so much. I found websites that actually have it!

Yeah, that's the only lead I could find. I sent him a message and he said that he might be able to help me, but he's not sure since it's a cocktail harness. Right now he's too busy to take orders though, he said that he was getting ready for something and that he would get back to me in a few weeks. Fingers crossed..

I'm just going to change the settings to boot strait into Robotron. I might change it up every now and then if I'm in the mood for bubbles or something, but I really only want it to run Robotron. I feel like it would look a little crowded/tacky if I ran more than one games. Even though I love all the games it comes with..

I don't even know what a switcher is. I know close to nothing about these power supplies. I just know that I'm going to need one. I'm not even sure how the Power Supply you sent me the link to would work or how it would wire up. RAM upgrade? Are you talking about the Defender board or about the Robotron Board that I might end up with down the road?

Yep, JROK board seems to be the simplest route. Thanks for the link. The board identification section really helped out a lot. Now I know that my Defender board will support Cocktail mode!

A switcher, or switching power supply is what some people are using to replace the older linear power supplies that were originally installed in their cabinets. From my understanding, the "switching" part comes from the unit's ability to switch to a selected voltage. I've never used a switcher before in the few arcade machines I've worked on, I've always kept with the linear.
So I don't really know which is better, but I hear that a rebuilt linear power supply would outlast a switching one. I'm not an authority on that, so don't quote me on it ;)
Thoroughly check out that site RayB and I linked. There's a lot of awesome information on williams games that'll better your understanding on their parts. I would also advise to take a good look at the game manuals, and parts list file (hosted on that site as well)..lots of additional information is in there. The parts list would help you get familiar with the components as well.

On the CPU boards, not the ROM boards.
"This hack allows us to used UN-modified 4164 RAM in place of the 4116 RAM, without modifying the board, harness or RAM. The advantages are, 4164 RAM is plentiful, we no longer use +12 reg and -5 from the PS, eliminating those points of failure, and the RAM runs allot cooler, leading me to believe we may be easing up on the +5 requirements."
From what I've read, the stock 4116's tend to fail a lot, and from what I hear are harder to acquire replacements these days. Perhaps you might consider this upgrade later on, it's really a long term investment that will save you from having to worry about pesky ROM failures in the future.
