what do you think? How wide should the bezel be on the sides of the monitor?

if you do the spray paint thing around the edge of the plexiglass, then the bezel doesnt have to be very wide at all.  BTW, i did the spray paint thing as suggested...it turned out GREAT-- unbelieveably nice.  Use high gloss spray paint, and not flat black and you'll be in good shape!
