Hello. Having problems with replacement of Atari APB medium resolution monitor for computer vga lcd monitor, using a gsb 8200 converter. Tried every possible wire combo off both the 5 and 8 pin harness I could think of.... any help is much appreciated !!!

the GBS-8200 has been cloned so many times it's literally a copy of a copy of a copy of a copy of a copy.
that said, there is an under documented alternate sync where you pull the yellow wire and move it over one position in the harness plug. this can sometimes help weird boards sync properly.
other than that, it could be you just bought yourself an end of the clone line board. ideally, you'd want to try and source out older REV boards (like rev 3), it's more likely to work properly than the new super cloned boards with scab firmware in them.
