If you wanted a new monitor for a full-sized Centipede and a new monitor for a full-sized Defender today, what would you buy?

I wouldn't buy new.  I'd buy a used monitor like a K4600 or a K4900, and do a tube swap if the burn was heavy.  But that's me. 

Defender requires a shelf mount monitor, most monitors sold new these days come with a "universal" frame though shelf mounts are available if you look for them.
