Wait! There's another one... MMmm one of the Microsoft products, that's free for individual use. Danged if I can remember the name but probably worth hunting down and trying. It's basically a Deep Freeze competitor.

That would be Windows SteadyState. It's a good free alternative if you're using XP. I used it for a library system's patron computers. Damn patrons. :D

EDIT: http://www.microsoft.com/windows/products/winfamily/sharedaccess/default.mspx

Also looks like they've added Vista support, although I can't vouch for it. Works great on XP systems.

do these programs allow you to keep certain files intact upon restoring it back to the way it was?  i woulnd't mind locking my cabinet down like this, but dont want it to reset my mame hiscore files back to the way they were

DaveMMR:
Personally, I just have a backup of all arcade related files (except roms, etc.) and have no visible admin buttons on the CP.   ;)

Deep Freeze will let you specify certain drives to keep unlocked ("thawed", they call it). I believe SteadyState will let you specify folders to keep changes in, but it's been a LONG time since I've fooled with it - set it and forget it, you know - so I can't say for sure. You should be able to download the manuals for SteadyState from the URL I posted above.
