Mame and Original In One??

I would just go the jamma round with a jpac if possible and manually switch them. But these will not be jamma only since the 12 way has 12 extra inputs per controller. So you will probably need to do some extra cables to plug back and forth.
But I bet you could get it working with only swapping a few cables and the jamma edge.

I absolutely love my MultiJamma kit, but think I agree with Lilwolf on this as the MJ isn't going to handle the rotaries nicely (there are a few extra inputs beyond JAMMA available on the MJ boards, but not enough to handle a rotary). All of the non-JAMMA controls on my MJ cab (trackball, Happs guns, analog stick) connect directly to the game boards and do not run through the MJ boards at all.
At least follow Lilwolf's advice at first, then you can decide if you want to do something like a parallel port switch.

Or you could just mame it and download the heavy barrel rom, since you could leagally do that. ;)
Actually, if the licence agreement on PCBs are anything like commercial software EULAs, you can't leagally aquire the rights to the game by buying second hand. not sure.
...regardless, would it be any different except psychologically if you played the mame rom as opposed to the actual board?
I guess you either restore it and restore it original or mame it. Not in between. It doesn't seem like there's a point. Just leave it dormant in the cab so you can restore it if you build your own cab for mame.

I just really want to run Rotary games like Ikari Warriors, Victory Road, etc. I have another mame cab for playing trackball, fighthing games and old school pac-man types. I guess I will probably Mame it just for the rotary games and keep the guts intact so I can always restore if I wanted.
