I regularly strip wires with my teeth. works better than the pliers method.
Just don't keep the insulation in your mouth to chew on... most wire insulation contains lead.

BTW...I tried the LEDs to light the coin reject but it didn't look so hot.
I recommend getting plain old small 5 or 12 v bulbs using those.
The LEDs tends to have focus light so you get hotspots while the normal bulbs makes it glow.

I lit my trackball with 3 red 12 volt LED's. These are available at nearly any automotive store in the US (not sure if it's the same for you).
It did involve stripping wires, but that was my choice... I cut a spare molex connector and made it so it would plug right into one of the spare connectors from my PC power supply. Yellow wire from the PC supply is 12 volts. No dicking with resistors or whatever.
