Questions about making controller adapter modules and generic-mod controllers..

By "generic" I mean (modding) controllers to be like that arcade stick in the picture: (removing the encoder/cable and) just connecting a (non- system specific) "generic"/25pin cable to the button contacts. So the controller can then be used/mixed-and-matched with any module.. [is there a better word for that?]
I thought this was the right forum for these questions,
maybe GameSX forum? (though that forum seems kindof small / not as frequented)

Yes, thats whats shown in the pic I posted also
Instead of a "control panel" (which has a "generic"/25pin connector out..)
I will want to be using some stand-alone custom arcade sticks and some console control pads modded the same way: modded to have "generic"25pin cables [instead of their consoles' regular cables], to connect to those modules same as a "control panel" would
I thought this was much more commonly done (here)..
someone who has done this before (as in the picture) would know exactly what Im talking about, I thought

And would it be simple to add 'sensitivity' control? (using a dual-head potentiometer perhaps??)
