I wouldn't. I don't like the IDE-style header in place of the screw-down terminals. That's personal preference, of course.

I agree with you there. Shipping is definitely Ultimarc's Achilles heel.
I only live about 40 miles from Ultimarc's headquarters but for some reason I have to pay about the same shipping rate as US customers. I've ordered fairly large packages from Lik-Sang in Hong Kong and it only cost me about 50% of what Ultimarc charges.

Is it ok to wire up a 4 way and a 8 way joystick on the same port of them as well, or is it time for a second controller at this point? The goal is to have a 2 player machine with a 3rd joy in the center for the 4 way games.

This is ok to do. The only drawback is that the 4-way and 8-way will both be live (ie. someone could grab the other stick while one is in use and screw up your game.) If this is an issue, you can just hook a toggle-switch in-line with the ground going to the sticks. That way, you can selectively enable/disable them.
