The failures you speak of are exactly what happened with me and my racing game cabinet. It's not a failure as much as a combination of the wrong hardware types and software limitations. I used a 360 degree wheel, return to center shifter, and microswitched pedals. It played only a few games correctly (sprint, badlands, off road). All other games was a weird kind of compromise, or didn't play it well at all. The shifter was the biggest issue since shifting registered as a button press, instead of locked in position to a specific gear.

Your cabinet is great looking. I'd probably have it work with just the games it can work well with. Make a small list for, Sprint, Badlands, Off-road, Demolition Derby and any other games that it kind works for, but quit trying to kill yourself getting Pole Position, Outrun, etc. to work.

When I had my driving arcade game, I put a couple other spinner games on it and people seemed to enjoy it. Puzz Loop, Cameltry and Arkanoid.
