Is there any way that I can use an arcade monitor in my cab, and still have the ability to hook up my ps2/other systems to play DDR/other games?
If there's bees in the trap I'm catching em

Out of the box this isn't possible. You need something to convert ntsc/pal to rgbs. Laserdisk games had such a pcb and you can find them on ebay pretty cheap. THis auction just ended yesterday.

The other way to do this is get rgbs out of your console. THis usually reguires some soldering or obtaining the scart cable for your console. This site has more info.

Wells-Gardner and some other monitor manufacturers make an accessory NTSC to RGB converter board that allows a game monitor to accept standard composite video signals such as from VCR's, video cameras, DVD players, etc.

Another option is to check out the "Super CD" from http://www.excellentcom.net/

RGB console hack may still be your best bet though.

No, they cannot accept TV inputs, but you can wire consoles to an arcade monitor with some wiring.  There are instructions to connect SNES, Saturn, Playstation, Genesis, and others to arcade monitors:

Nearly all consoles output rgb,you can either buy a scart/rgb cable and wire it up to the cab with bnc connectors or scart etc.Or you can solder directly onto the pcb for your ps2 and whatever else and make a custom connector on it,or just wire it straight up.
