That question has been asked more than a few times indeed, over the last decade.... but it's unfortunatelly mixed into the 90+ pages of that Thread :-\
I personally don't use/own WiiMotes, that's one of the reason why that kind of configuration is not mentionned in the DemulShooter wiki.
Short answer is : Yes, people are using WiiMotes succesfully with DemulShooter (and with multiple devices at the same time, also succesfully)
Now, between touchmote, dolphin bar, mode2, mode4 or any other hardware/software possibility in that domain...I don't have the answer myself

As for chat GPT, I will let other people play with it. It's really not my cup of tea....
But, I think you'll get more results targetting the open internet where there are websites/forum with people using DemulShooter for WiiMotes, rather than this old thread
