How do you set difficulty to "normal"?

My options are:
easiest
very easy
easy
medium
medium hard (default)
hard
very hard
hardest

EDIT: Oh, do you mean in the game selection screen, we need to choose "normal"?  The difficulties listed above are what's available in the operator settings menu.  Please clarify.

Sorry, I don't know anything about the operator settings menu.  It is the difficulty selection in-game.

Also, I'll go ahead and post an update score.

When you get rid of gems, it sends time bombs to your opponent; when they get rid of gems, it "bombs you"   The count down gems dont count down time, they count down "moves". So after you place 5 pieces, they turn solid. The key to winning and big scores is setting up combos and or HUGE gems. when you put 4 pieces together like a square (2x2) or other rectangle sizes (2x3, 3x3,2x4,4x3,4x4,etc) they turn into a bigger gem. The diamond breaker gems that clear out a color are worth less then using a normal round breaker, I believe the value is 1 to 1, so if you have a 3x3 block of red, its worth 9 counter gems instead of 18
