Analog Pedals - anyone know a good set?

Not likely, but just in case.......
Don't ever map the pedals to Pedal Inc and Pedal Dec in MAME.
Those are for buttons being substituted for analogue controls.
(that might explain why the pedals are behaving as buttons)

LMAO! That's precisely what I did! I thought it meant pedal going down and pedal coming up, as in establishing the range of the pedal's motion! That explains alot!

just a quick question if you know off the top of your head:
super sprint/championship sprint - both are listed as having analog pedals but do you know if the original cab had true analog inputs or if they were closer to digital (i.e. all or nothing)

According to the repair manual, the pedal used a potentiometer, so it would be true analogue.
The spreadsheet linked to in the driving cab thread is based solely on repair manuals, so it should be reliable.
The column A/D under pedals is for Analogue or Digital.
(If it's a combination of the two, click on the cell and then read the full explanation in the formula bar at the top)

Does anyone know of a mame compatible analog pedal that works well? (preferably usb to save on the hassle...)
I figure there must be PC pedals that work well enough...

If you can find an old set of CH analog Game port Rudder Pedals and run them through the Gameport-to-USB Adaptor (If you don't have the old Gameport on your PC), you should be golden. They have a switch that switches them between rudder or gas/brake. Mine is still going after all these years (Since Janes AH-64 Gold came out)
