If you want to do some kind of stop motion like this - what program works best for making the movies?

Yes, as an animator myself, I do. ;)
I've done stop motion with actual armature-characters before, and that took a hellava lot of time, and forethought!  Not to discredit his work, this is just using lit candles. There's no posing, no fiddling with moving parts, there isn't multiple camera angles...if I were going to do something simple like this I would have made it longer.
