Let's say I just throw a bunch of files onto my ipod and hit shuffle, but I DON'T want it to play a few tracks in particular, how do I do that without throwing everything else into a playlist?

Right click the song and select 'Get Info'.
Go to the Options tab.
Check the 'Skip when shuffling' box.

I never noticed that option. I quit using "shuffle" once I started ripping audio books.

Yeah, 'Skip when shuffling' and 'Remember playback position' are the two options that make audiobooks on an ipod smooth sailing. Especially if you use a program to stitch all the small mp3s from a ripped audiobook into a single itunes audiobook file with chapter marks in it.

They do for me?
If I do a 'Get Info' on a podcast (as in, one that iTunes is downloading because I subscribed to a feed), both 'Remember position' and 'Skip when shuffling' are checked and the boxes are greyed out so I can't uncheck them.
Not sure why they wouldn't be for you. Are you running a really old copy of iTunes or anything?

Turns out it's old MP3s of a radio show I uploaded to the device, rather than put on their via the official "Podcast" channel.
