I just picked this up, cleaned and fixed the joysticks and buttons but I'm still a bit of an arcade newb. It plays great but the sound is kinda quiet and even 'tinny'. I adjusted the little pot on the board but it seems to have reached it's max and still low. Any thoughts or suggestions?

Check the amplifier section of the board, likely it needs new caps.
Crazy Kong is also a bootleg, what does your cab look like?

I thought it was a licensed copy made by Falcon for non US markets?

Me too. Oh, well, doesn't matter to me.
Someone also suggested the obvious to me - check the speaker!
I don't know what kind of cab it is but it is in awesome shape!

I don't even see the speaker in that picture. But of course, check the speaker. Change it out with a compatible one if you have one.

That my friend is an Atari Asteroids that's been converted. The tell tale signs are the single-slot steel coin acceptor and blue "player start" art under the glass. The rest of the Asteroids art appears to have been scraped off. (Do the control panels have 3 holes per side "plugged up"?)

I don't recall seeing plugged up holes. Is it possible to find these metal control panels somewhere? Do you have any extra, RayB?
