What mod can I do to an original Pac-man in order to keep the high score from being erased when the machine is shut off??

The easiest way to accomplish this is to compile your own version of MAME. It's actually pretty easy, and you'll be glad you did it once it's done.

There's not a high score save kit that I'm aware of.

I did a bit of digging, and couldn't find one outside of a multi-game kit. Not surprising, because IIRC it only retains the highest score, and not a table of them.

Ah bummer, I thought it would be as easy as swapping out a chip or something. Oh well looks like I'll just have to leave it on FOREVER! :) J/K!

There's not a high score save kit that I'm aware of.
There is not a HS kit perse, but there is the Mike/Dave 96-in-1 kit that adds a complete name and score table to every game and saves them in NV ram. Only drawback is that it doesn't change the color prom so PacPlus and a couple other games aren't quite right with colors. But it does have Pengo on the kit :)
