I'm coming into possession of a mame cab soon and I want to make some updates to it. I'm going to put plexi glass over the control panel to start. How thick a sheet should I be using? Next, I need a bezel. I see lots of generic art for marquees but I haven't seen any for bezels. Can someone point me at something? next up I'd like vinyl for the control panel, but the panel on this is a weird shape. Do I just order one and cut it to fit or should I order something specific for my panel?

1/8" is fine for a control panel. If you want a more durable, albiet more expensive option, you may want to try Lexan. as for bezel art, you're prolly better off getting something printed at kinkos since its not backlit and behind glass anyway. As for the control panel, order something from mamemarquees then cut to fit.

Cool. Thanks. Is there a template out there for a bezel in visio or something like that?

There are a few generic bezels at localarcade but downloading them seems to be a problem. You might try the vector library for some. It depends on what size monitor you have.
