Yeah so I was thinking of building a slick & simple 1 player machine utilizing only 4-way joystick games.
Is there some magical list or search term I missed that documents the games utilizing only 4-way joys?

Click the deluxe search option up top and select your parameters on the left. Sort through the list for games that work for you. Another thing to consider is # of buttons and screen orientation.

If it was me, I'd do like some of the multicades have. A stick in the middle, and 2 buttons on each side. That way, you can do games either lefty or righty. I've thought about building a 2nd MAME cab (maybe a cocktail), and make it a vertical (The one I have now is horizontal). Also have 2 joysticks, 1 4-way, for all the Pac-Man games, and an 8 way for others.

If you limit it to 4-way specifically you'll miss out on a lot of 2-way games that would be completely playable on the 4-way.
My favorite single joystick setup is:
OO Joy OO
O
That lets you play button-only games (like Space Invaders, Asteroids, etc...) using buttons.
