I'm thinking of building a cab in the vein of fighters such as Marvel Vs Capcom 2 and Capcom VS SNK where the screen is back farther and the controls are like a seperate piece a few feet away... From the description I don't see anything that would be too difficult to do, so sure. And it sounds like you've got a pretty good mental picture of what your setup will be.

The cabinet style you are refering to is called a "showcase" arcade cabinet. There was talk about construciton plans for one of these awhile back (Mr. Salty had the dimensions...but I haven't seen him on in awhile).
