I want to see loads of answers before i'm back on tomorrow lol
Name all the games you can think off with more than 1 trackball !
Now I'm starting it off with a mega.... 3 :o Atari's Rampart from 1990.... Beat that ;D

Too Easy.
The 4-player versions of Atari Football, and Atari Soccer.
They beat your pick all the way around.
They both have FOUR trackballs.
They are both from 1979, so they were out 11 years before Rampart.
And the trackballs were all 1-1/2" bigger than the Rampart ones too, so there's a total of 18" worth of trackball on them, vs. the measly 9" on Rampart. ;D

You can do a deluxe search on MAWS (http://www.mameworld.net/maws/) if you are really interested in all of them. Search for simultaneous players = 2, 3, and 4 and controller = trackball and you'll get some more results. The only games I've ever heard of or seen in an actual arcade have already been mentioned though.

Can someone answer this question for me. How do you get two trackballs working at the same time? I loved the atari football. Can I do it with a mini-pac?

SegaSonic The Hedgehog (Japan, prototype) - Known as sonic, sonicp in Mame. There is a 3 trackball version, but this must be the control panel for the two player version:

I believe the miniPac only supports one trackball + one spinner (ie 3 axis). The Opti-Pac supports 2 trackballs.

In mame enable -multimouse. You might have to remap.
Limitations:
Each TB must be an individual mouse device (except optipac, which windows sees as two mouse devices).
The ps/2 port is seen as one mouse device.
You must be using winXP or vista.
You might need to remap. For example, if you have a normal mouse & 2 trackballs connected, the mouse might be mouse 1 and the TBs 2 & 3. The inputs defaults assign mouse 1 to player 1, etc.
So... AFAIK (I don't have a minipac) one minpac won't do it. OTOH, two minpacs, one minipac & one mouse hack, one minipac & one optipac, one minipac & one optiwiz, one optipac in dual USB mode, or minipac TB & a USB/ps2 TB will all work.
