Hey there all
Not going to attempt this myself,  ;D but I came across this page where the guy appears to have hacked his game pcb direct to a tv chassis:

anyone else gone this route?

I agree with Snaaaake.  The JROK alternative is alot safer.  Every TV is different and it takes alot of knowledge to work on them properly.  Isolation is always a problem.

You may be able to find an RGB to S-Video, or RGB to composite convertor.
