Title: What version of Pac-Man and Ms. Pac-man should I play??

I'm just wondering which of the versions I should play to get closest to the real
deal :)

And no, I don't have an original machine ;D

I'm guessing the ones named Pac-Man and Ms. Pac-man respectively.

I'm assuming that you are referring to mame version, not rom version as each really only has one main rom.  The answer to that, I don't know - but am curious....  bump for you.
