Does anyone know where I can buy the Stella USB joystick adapter and Atari joysticks?

Holy crap, so it is. That's the only place I know of that sells it. It seems you're not the only one waiting on the Stellas (http://www.atariage.com/forums/index.php?showtopic=109202&hl=stella).
Wish I could help you. I suppose you could roll your own, but then again, don't know how you can guarantee compatibility with Stella.

An Atari joystick is really just 5 switches: up, down, left, right, and fire. All you need to connect them to a keyboard emulator (KeyWiz, Ipac, whatever) is an easy to find 9 pin connector. Look in the wiki (http://wiki.arcadecontrols.com/wiki/Atari_Controller_Interfaces) for how to do it.

The joystick is easy to interface. The thing that made the Stelladaptor so great was that it worked with ALL Atari controllers- Paddles, Driving Controls, Keypad, whatever.
I wish I'd bought some when I had the chance.

I can't get me stella adapter to work with stella. I think my u360s are causing a problem

My bad - didn't even see your last post there - posting half asleep (or more).
Probably a stupid question but....did you try hitting tab, and going into event remapping to config up, down, etc.
If so, did it detect anything when moving any controller hooked up to the stelladaptor when doing the remapping?
IIRC, stella detects up to 2 stelladaptors (ignores any more). If it is actually detecting any usb HID's, anything after
the first two would be ignored. You may have to unplug or disable other usb devices for it to detect the Stelladaptor.
Sounds like a bit of fun with trial and error.
