Although it would be a lot easier to just buy a TV with the options to automatically turn back on after the power is interrupted and to return to the last channel watched, is it possible to solder up a connection to have the TV permanantly on and is it possible to use service mode or..???... to get it to stay on S-video (instead of using a remote to get back there).
I've searched to death and seen the tootpick method, but is there a more permanent generic way?

Yes but you need to have a schematic and be competent in what you are doing.
Normally the relay can either be shorted or better yet the relay driver to force the power on.
Next the input is normally controlled through voltages to a bilateral switch, just find them and circumvent them.
Easily said, not so easy to do??
Good luck
