Is it best to use the latest ROM revision? MK has like 6 or something, so should I use the latest one?

Do you mean version or set? If the latter, it's really up to you. For example, both Asteriods and Deluxe have two sets. Supposedly there are differences, but I haven't really seen them.

Both really, set 1, set 2 Mk has revsion date, revision later date, revision ever a later date. like 8/9/04, 9/10/04, 12/9/06 for example

I've seen a revision of MK that was a hack. Can't remember off the top of my head, but it was on a dedicated cab and had the roms changed to a version called "Immortal Kombat" and has you fight bosses only and use kill moves anytime.
Guess it depends on whether you want to play the original version or not. I'd do some research on each game to find out what the differences are between revisions.

I usually just go with whatever revision is the master ROM.

Look the game up in MAWS or in the History.dat file or at http://www.arcade-history.com/index.php?page=database
I'm not a MK fan, but sometimes you might want the later version or sometimes the earlier one.
For example, early ROMS of Asteroids prevented the ship from being hit if it was behind one of the player score areas. Later ROMS disabled this bug/feature.
I play an obscure version of Gun.Smoke (gunsmoka) that has levels 3 and 6 swapped b/c the actual machine that I played the game on years ago had this version in it.
In other cases, the difference between versions may just be the text on the copyright screen, or the "Winners Don't Use Drugs" screen at the beginning, so it really doesn't matter.
