Hava a SOLO Credit board that is connected to a MARS Coin Mech. On the credit board there are various screw terminal block, 1 of these block terminals is for 'Coin Switch' which has 3 inputs which are:
Coin Switch N/C
Coin Switch N/O
Coin Switch Common
Which one of these connections should i connect to the I-PAC 'Coin' Input???

Ground and N/O should do the trick for you.

Common is ground, right?? So connect N/O to 'Coin' input on the I-Pac and Common to 'Ground' input on the I-Pac?? Am i right in thinking that the I-Pac can take up to 5 volts?? I cant see anywhere on the Credit Board diagram that says if these Coin switch terminals carry a electrical current or not!, do they usually?

Grauwulf is right. Common is your ground. And your switch will be normally open (NO). Once it closes the switch(NC) (AKA the credit in the machine it will activate).

So i dont need the N/C terminal connected to the I-Pac then?

no, no need to connect the N/C connection.
