I have a GP-Wiz49 interface No-Solder version, and am a bit unsure where to wire the left over wires from the IDE cable that dont plug into the 49-way joystick. Where do these extra strip of wires on the IDE cable go to?

They go to buttons, etc. But you may want to use a "euro" style terminal block in-between. You can also wire them directly to your button wires.
Check out the diagram on the instruction sheet. It will tell you which pin does what.

How many buttons can you wire to the GP-Wiz49?

23 or more.
So you can wire a regular Happ Competition stick (or 2) plus all your buttons to the GPwiz in addition to the 49 way stick if you want.
I plan to use a GPwiz49 to power an entire control panel (minus the trackball and spinner of course)

Ah, i think i have the GP-Wiz49 Eco version, that doesnt support than many buttons does it?

No, I have the Eco too and it looks like I have about 23 Free Inputs (or 22 with a Joymode button). You'll have more than enough to work with here.
