Howdy,
Which joysticks will let me change from 4-way to 8-way movement without having to get at the inside of the CP? I know the Ultimarc Mag-Stik Plus can do this but are there any other joysticks that can do this as well?

Yes. Ultimarc sells them. They used to be called the T-Stik Plus. Now they are called the Mag-Stik Plus.
I have a T-Stik Plus and I really like the 4/8 way interchangability...just lift and twist the stick from the top. The only knock is that the stick has a somewhat short throw, meaning that it doesn't have much travel moving from the center to whatever position you want. Some people like that. I got used to it and now I like that.

Do the OmniSticks HAVE to be top mounted or can you mount them from below somehow?

They used to be a DIFFERENT stick called the T-Stick Plus. However, the return mech on the Mag-Stik plus is different, but the functionality (switching) is the same.

The only ones that allow you to do it from the top of the panel are:
- T-stick Plus
- Mag Stick Plus
- OmniStck Prodigy (all the versions linked up above)
The T-Stick has been replaced by the Mag Stick, but you can still find them if you really needed a T Stick instead of a Mag Stick.

Yeah, I have a pile of various T-sticks. One of these days I'll have to sell em.
(nothing wrong with them, I just keep upgrading when something newer comes out.)
Also... if you feel like burning a weekend...
You can get the GPwiz49 and a 49way stick some software...and have your stick auto-convert to your hearts content.

I have a X-Arcade with the OmniStick mounted from below. It took a little work, I had to remove the mounting plate, and move the lever to the ajacent side (so it would fit the routed area and still have the lever on top). I suppose drilling the holes can be tricky for some.
