I watched about 20 minutes of it once. Couldn't hold my attention.

Well, I don't think it's much like anime, at least how I think of anime.  Calling Cowboy Bebop anime is like calling the original Transformers, He-man, Voltron, and Thundercats anime.  Bebop is an action animation.
I think anime like sailor moon, where everyine has those huge cutesy eyes.

Cowboy Bebop, Witchhunter Robin, Trigun, Outlaw Star... action animation is all good.

What got me hooked on bebop was session 20, the fight scene and cool effects at the beginning.
