I don't have a picture right now, but the Reactor cab I bought has a momentary push button on the back of the cab, where the back panel comes off. My first guess would be that it switched (or unswitched) something when the back door was off. Perhaps a tamper switch? Perhaps it set the game to free-play?
Anyone know?

Not sure... some cabs have a monitor kill switch that opens when the back door is removed... I incorporated such a switch on my cab...

"interlock" switch.
It's meant to kill power when the back door is off (safetey precaution). The switch is designed so you can also PULL on it, to set it into powered mode with the door off.
Most game's I've come across have this switch either removed or turned 90' so they always stay on. I guess it must have been annoying to the operators...

That is a safety interlock power switch. At one time Underwriter's Laboratories required it for the game to be UL approved. It's purpose is to kill the power to the cabinet when working on the machine. Many operators disconnected or turned it around because it caused service calls of "no power" condition when the back door warped slightly. It also killed power if some a**hole kid pried the machine open to steal the money.

Holy crap. I was always wrapping mine with electrical tape to keep it activated while I had the back off. I had no idea I could pull on it!
