If you have a control panel with only a 360 wheel is there any way to bypass or avoid the forced acknowledgement of games with problems by typing "OK" or rocking the stick?

Depending on the version of MAME you disable the OK screen altogether. Check the documentation.

First I would try going into the config files and set it up to remove the promtps. that'll work for most games and most versions of mame.
If the games you have on there still need the "okay". you could map your shifter to "o" and "k" or if you don't even have that maybe a quick toggle on top of the game or inside the coin door.

I have the standard messages disabled however some games have simple video problems or give a "Cocktail Flipping Mode Not Supported" message. This does not seem to have a setup toggle that I am aware of in MAME v94.

No I don't think error messages can be skipped.
I'd recommend mapping "o" and "k" to the shifter as was suggested earlier. Or mount "ok" buttons inside the coin door.

Man I really want to stick with a one button/wheel/pedal configuration. I sort of like the hidden button in the door idea, but I hate the idea of my kids opening the door.
Anyone ever tried assigning an OK macro to one button?

this is way out of the box..
take two micro switches and put one so it clicks on the pedal when down and the other so it clicks on the up. map the down one to "o" and the other to "k"
then you can just mash and release the pedal for "ok"
not sure about macros, but as long as it sends the right keystrokes I don't see why it wouldn't work.
depending on what encoder your using you may be able to hook up "o" and "k" to the same switch and see what happens. it might work, although depending on the order the letters go through go through it might take 2 presses. "ko" vs "ok"

Would you be willing to recompile the MAME source? Then you could modify the status of the games you're dealing with and eliminate the problem altogether.

Both good ideas. For the driving cab since there will only be about 40 games I might be willing to re-compile.

One problem with using only one button would be that "k" would always be pressed down. Not really a problem if you never need to do anything besides mame on that setup, but it could cause problems if you have to ever do anything with a keyboard pass-through. I kind of like the macro idea.

Since the controls are only going to support about 40 games I am wondering which of those games have the warnings requiring you to press ok?

You have no buttons on the CP? ??? Not even player one start? P1 coin?
'Cause if you have at least two, just remap in mame's gerenal inputs "UI left" and "UI right" to any two buttons. You see, "wiggle joystick left and right" works because UI left and UI right are mapped to the joystick by defaut.
If you only have one button, try mapping it to both UI left and UI right. Might work.

BuddaMAME will allow you to skip the screens by setting a flag in the .ini file.
