Title: Control Panel Wire-->24 g Speaker Wire

Just curious if 24 gauge speaker wire (stranded) will work to wire up Control Panel switches??  I have a bunch that's collecting dust....

NO!

It will SURELY catch fire from all the current going through the arcade buttons / joysticks.

You need at least 14 gauge wire.  Maybe 12 to be safe for the grounds.

I thought you were serious at first....12 is way, way too big, I have 12 gauge wire  powering the 12 inch subs in the trunk of my car, I am using 16 gauge, 16 to 18 would be good.

24 is fine.  A lot of the iterfaces are using hacked IDE cables which are 28-32 gauges (lots thinner).
