depending on the type of games here are a few off the top of my head:

Xenophobe
Off-Road
Super Sprint
Ghost Busters

I'm sure there's plenty more, but that's just what comes to mind currently

Michael Jackson's Moonwalker was 3 player IIRC

You could also use a lot of 4player games on that cab like Xmen, Simpsons, Gauntlet etc that let you choose a character based on coin slot.  You'd be unable to play as the 4th player, but you could easily get 3 players in the game.

B.Rap Boys(dipswitches must be set to 3 players, also you will need a board, Mame does not work yet)

I was a fan of quartet after playing it on the sega master system.

It is a four player game, but as stated above you can easily play 3 players.  Many other four player games like gaunetlet, simpsons, tmnt, etc would also be great. 

Games like rampage and rampart are three player and would be good also.  Especially if you could get three trackballs to work. Hehe. :)

Im sure cadilacs can support 3 players there are 4 selectable characters if i remember correctly.

I'm making a 3 player cab so obviously I'm interested in this thread i have done a custom list and have about 48 games on it admitidly some are 4 player games like tmnt and simpsons etc but on the whole there are quite a few titles out there for 3 players :D I could make a list in note pad for you or send you a copy of my mame ine file? (if that would work?)
