Title: Would these Aracade Buttons be ok for a Gamepad Hack?

sure.
any button will work. Leaf or micro switch.
all you are doing is making the contact. the game pad knows no difference how the contact was made.
only word of warning I have is if you use a sidewinder (old style) do not put a extention cable to your sound card. Fries the game pad. ( I know this first hand  :'( ) If I had read the manual first I would have known this  ;)
