I've never wired one, but I believe you use the 5 pins that protrude from the side. They should be something like:
- Common (ground)
- Up
- Down
- Left
- Right

Edit: Here's a standard wiring harness.

The first pin is probably ground. Then the others are directions. You can just hook em up and try out the directions to see which you've mixed up.

It depends on which way you turn the stick...

I would guess black is ground.  Plug in your stick, make sure it is oriented the way it will be in the CP and plug black and one other color into your encoder (or to a multimeter) and see in which direction it closes the circuit.   Write it down, and make sure you don't turn the stick 90,180, or 270 degrees when you put it in your CP.

The microswitches are there.  They are under neath the clear plastic restrictor plate.  The restrictor plate snaps on and off so you can take it off to see the switches better.  You should be able to solder to the tabs on the switches like normal except you only need to wire a ground to one of them since the PCB conects all the grounds for you.  If don't want to solder and you don't have one of those 5 pin conectors the pins on the pcb are spaced the same as the ones for a standard hard drive or floppy drive cable.
