Are you planning on using a TV, arcade monitor, or PC monitor?
If you're planning on using an arcade monitor, I'd look for a cab with at least a 25" horizontal monitor in it.
If you are considering a 2 or 4 player control panel with a lot of controls, you should probably look for a machine with a large, detachable control panel.
You might want a JAMMA harness if you're thinking of ever using the cabinet with real JAMMA arcade boards.
See this recent thread for some discussion on what makes a good MAME cabinet...

For reference, I got this complete working arcade machine for $250 at an auction...

I was just going to go with the easiest setup for my first time, so I was going along with the computer monitor setup.
As far as all the controls go, I was thinking of just the standard six button "street fighter" style setup.
I'm going to go pick up Project Arcade right now, I'll just read through there and make a better decision based on my ideas.
thanks for all the help!
