For a long time I've wanted to make an "art book" from the photos documenting my cabinet's construction (or for those who follow my project thread.... the LACK thereof.) :'( Since my cabinet will spend a loooong stint at work before I keep it at home, having a book explaining what it is, how it works, why I made it, etc... should be a big help to keep me from explaining it to clients day after day.
Mypublisher.com is one of those online photo places that can print real books from digital photos/files. I just saw they now offer huge oversized volumes which are just begging to be used as coffee table books showcasing MAME cabinet projects.

I think it's a good idea.
However, I think a coffee table "art book" would be better suited to displaying lots of unique arcade machine designs with maybe a few images of them being constructed, as opposed to just the one machine shown step by step.
However #2, in your case, where there's a lot of custom work being done (the logo etc) and you have 3D renders of it, it'd probably work out quite nicely :D

There is a smaller 9" x 12" hardcover book which I think would be a little more appropriate. Too bad this didn't come up before I started. :P

Could probably be slightly commercially successful, an art book showing off various custom built arcade machines as well as commercial machines, with histories of the development of arcade machines from pacman to current ones etc
