Well I am going to build a cocktail cab in a month or so. For the last several months I have been playing with software. I have an 800 mhz AMD with 256 mb or ram. So far I have tried out arcade OS and ultrastyle.
I would really like to get a couple of other emulators working in my cab, such as a good NES, SNES and if possible N64 emus. I have tried the emus listed at screenshot archive that have been "fixed" to work with MAME. I'm just not very happy with the selection. Zsnesw v1.36 will not work at all for me and I have tried VirtuaNES v0.92e which works but just is not much to look at. I would like to get away from the whole windows look all together. I have not tried Project 64.
I would guess with my system I would be better off running in DOS but don't know if there are any good DOS emus out there that will work with a MAME cab.
My question. What are others using? Anyone else with a cocktail cab running other emu's besides MAME? What FE are you using, under DOS or windows, and what are some good emus other than the ones I mentioned from screenshot archive?
As always thanks to anyone who might be able to help.

The console emulators at screenshotarchive are setup to be run just like mame. That is, use default mame keys, exit using escape, go to full screen on load etc... You need to setup your front end to launch the emulator with a game the same way as you do with mame, that way you never see the actual emulator gui etc..
I'd recommend sticking with Windows as opposed to DOS. Easier to get drivers etc.. setup. Also the larger majority of frontends and emulators are designed for Windows.

Thanks stuzza! Thanks for the insight. I have been thinking I need to set up the FE to launch the GUI of the other EMU's and have been disapointed with the looks. I have used Project 64 as a stand alone and like it but the others were disapointing. I will try and learn how to do it the way you suggest, and think I will be happier with the over all look and functionality.
I will have to play with stuff a bit more before I can tell if my system will work well enough to run everything to my satisfaction.
