...to sand between layers of paint?
Unfortunately I didn't reach the paint stages during the nice warm months, so I am going to be forced to paint inside, or wait until next year (I'm not waiting). Sanding this beast in my house isn't going to be an option. Will the paint turn out like complete crud, or will it just not be as strong and resistant to damage?
I guess either way I am painting it now, but am just curious about what to expect.

Sanding between coats just gives you a smoother finish. It isn't required, but you can definately tell the difference quality wise at the outcome.

I did not sand between coats and the finish turned out great. Kilz primer, then three or four coats on top with a roller. It has been extremely durable and the top of the CP looks as nice as the day I painted it (1.5+ yrs ago).

??? depends on what you are painting with. As a former car painter (my family owned a body shop) some paints may not flow out smoothly if not warm enough. Some may not set up in the normal time and you may have to wait longer until it sets hard. Please read this with caution, if you using spray paint use a heater (not kerosene will leave a residue) to heat the project area up. Shut the heater down and remove from area. Paint the project then air out the area really well ,then heat some more. As I said use common sense hear no open flame or hot spots when you paint, and not until you air it out after painting
