I'm building my first cocktail cabinet and I'm using the Wells U3100 from the onboard video card in my Dell PC. I can only get 640X480 at 60Hz to work properly, and in this setting I find many games don't work properly, as well as 800X600, in both cases the screen is all out of whack and everything is a blur, I end up having to plug a PC monitor in to see well enough to change it back to 640X480. I've read many people say that they get great results at 800X600 at 56Hz, but I can't seem to set my refresh to 56Hz. Do I need another video card? If so, which is the best one for me to use?

Yep, a lot of video cards don't let you choose 56Hz. I used a Matrox g400 with mine and it worked really well. I also had fine results with an ati rage128, but you need to be careful when choosing that card, there are so many different versions and some don't have 56Hz.
