There's actually been some threads already about arcade resorces in "OZ". there's quite a few byoac'ers from AU.
I suggest you do a search (and buy a vowel for chrissakes!)

As for your joystick issue. Most vendors in Australia tend to sell the MCA joysticks (which I personally hate but that's just me) and these sticks come in the colours you are after. They have a restrictor plate on the bottom to change from 8 to 4 way but it isn't as user friendly as Ultimarc's sticks and has to be changed over with a screwdriver.
Shoot Andy at Ultimarc an e-mail and see if he can get the balltops for the T-Stick/J Stick in yellow. He has the other 3 colours you are after and I know he was trying to find another source.
The only other 4/8 way switchable stick I know of is the Omni-Stick (Basic and Prodigy) but they have even less colour choices.

I have these MCA joysticks on my cabinet in the colours you are after. I bought them from Southern Star Electronics, I guess it takes only 1 minute each at the most to change one over, but it's a pain in the --I'm attempting to get by the auto-censor and should be beaten after I re-read the rules-- and in my opinion they are the ugliest joysticks ever made.
