what thickness mdf do you need to insure that the tmolding will cover both laminate and wood on the edge?

that would depend upon your t-molding. T-molding comes in many different sizes and styles.

A common wood thickness being used is 3/4". 13/16" T-molding is available for 3/4" stock with laminate. You can get it at http://www.t-molding.com/
