how much t-molding is required for a pacman style cocktail cab?
would the 20' be enough?

More than enough you only need the T-molding to go around the flat top so unless your cocktail is going to be more than 5' square you will be fine.

the midway cocktail cabs have t-moding around 2 sides and also the edges of the CP's

OK well if you are building one of those it looks like you will need more than 20'. Remember to have a bit extra for stuff ups.

Can't you just measure the bits you want moulded on your plans and then order that distance plus a little safety buffer?
3 of the 6 main panels of my cab are shown below, I added up the routed perimeter in CAD and found it to be 11m (~36'). As t-molding.com only sells in 20' batches, 40' is just right.

Even if you modify it slightly, it'll need almost the same amount of moulding.
