yes to almost all your questions...
but...
analog isn't all that easy.
you have to find the resistance range on the pot on the existing joystick... It's probably 0-100k
true arcade analog joysticks are 0-5k. There isn't a way to directly convert that.
BUT... you can do a few things.
This assumes you are going to use a REAL arcade analog controller
1) for about 25 bucks (you need 2) you can get 100k pots to put on the joysticks. So for $50 or so you have an old joystick with new pots.
2) You can give up the controller for analog and get Dave's AKI's controller. Its 5 analog axis's and 14 buttons... And your done. http://dave.bit2000.com/ (http://dave.bit2000.com/) and its 32 bucks..
If you plan on using your original... I don't know off hand on how to mount it... but taking it apart + a rounter on your control panel should hopefully do it for you.

Does the Atari Starwars 1983 game use anaolg controls or is it also 8-way?
If i modded an 8-way stick and mounted the flightstick handel on it, would this work?
What arcade games actually uses analog controls?

Starwars is analog.
95% of the games are 8way... and its MUCH easier to deal with.
So for your first control panel I would recommend this.
1) Pick how many players you care about. (Street fighter games? need 2... Gauntlet with many others... look at 4)...
2) Then pick your favorite type of game. Classics? you might want a 4way. Fighters but with some classics? You might want a 8way and seperate 4way or a switchable one.
I personally think 2 8way with 7 buttons each... then player 1 has the 8/4 way top panel swappable from ultramarc and you are golden for MOST games.
Then decide from there if you want to move it to hotswappable control panels (where you pop one off... pop another on)..
try to stay away from frankenpanels. 15 controls on one 8ft x 15ft control panel... it gives us a bad name :)

Well do to time money and space i will be making 2 cps
both will have 2 controls on them. This way i can just connect both if i ever need to go with 4 players. By building them in 2 parts i can have one now and take my time with the second one.
Also due to money, i'll be hacking gamepads and or psx controllers to make my cp.
I have my MAME sys connected to my TV and my coffee table is only so large.
