I have a LOT of MP3s that I ant to use in my cab.
The standard "old-fashioned looking jukebox" style really doesn't work for me because of the number of tracks that I have.
NOTES:
All of my MP3s are in folders (Artist's name)
I'd like to have navigation as easy as possible (for parties)
Album covers and other bells and whistles are low priority
Visualization effects (similar to Winamp plugins) would be neat.

Media engine
I believe you may want to hack up the interface (skin it) a bit, but it's really pretty easy to re-skin. Doing that allowed me to remove all other options other than music. It's also designed to be used in a car, so it's pretty easy to "newbie-ize".
It uses WinAmp, and I believe you can use the same visualizations. I don't "do" visualizations, so I am not fit to comment on that part of the puzzle, but for everything else, I believe you will find it will suit your needs well.
How many albums are you talking about? Prohibitively tedious to get art? I found that adding album art made it possible for my wife to figure it out without a lick of help from me, so if your party guests are like my wife, you're golden with that.

Yeah.
I backed up all of my CDs to MP3 @ a 256 bitrate.
I now have 7 DVDs full of MP3s. ;)

There is a few different interface views, it's the only jukebox that
I'm aware of that supports multiple sound cards and/or multiple audio and video zones.
So you can route the audio or video to any PC withing your home or have the
audio come out of different sound cards in the same PC.
That's pretty cool if you want to have a media server connected to a home amplifer and
then have touch screen controls or wireless controls throughout the house. The audio
would come out the server computer instead of the PC the player is installed, so you
can go wireless or not have to run audio cables to all the computers in your house.
It supports over 50,000 audio/vid files as well packed with tons of features.

Maybe my own jukebox software: (Arcade Music Box).
You should have no problems with a large collection like this, because it just act like a MS Explorer (no database), but in fullscreen.
You may need to remove the cover art display in the skin configuration (but it easy).
Visualization effects is not supported yet, nor networking.
