I'm hoping I have enough junk here to start this and time too. Short Version-
I like arcade gamess (duh) I don't like playing on NES or cheapie 1-up cabs. I like ato stand against a coin op with the controlls laid out in the original configuration with the arcade controls used. There are a lot more parts than games and if I brought home 1 more, I'll be staying elsewhere, so.....
1-3 cabs with usb or quick connect cps. I'm not an idiot, I don't need a Missle command layout and a crystal palace one.(but now I remembered I need some volcano buttons....)
A Defender layout with correct spacing and a 2 way stick, road blaster wheel, star wars yoke, recoil mounted guns, Front line spinner. Not a 100% correct every time but just my preferences and common sense. Spyhunter wheel is probably out, (only 1 game too much $$ pita hookup) A Dual tank stick for vindicators would be nice, but it would weigh 100 lbs and be bunkly as hell for an ok game (other duals are missing from memory) But If I do it, I'll use converted happs with plastic shells.
I've seen frakenpannel and the Gargantuan layouts but has anyone kind of done something akin to this? (I'm sure 200+ links are to follow... :) )

The over-the-top modular setup that springs to mind is Paul Olson's build here (http://forum.arcadecontrols.com/index.php/topic,68892.0/all.html).
I ended up with 61 controller panels and 8 blank panels.
The breakdown is:
8 blank (2 4" endcaps, 2 2.5" endcaps, 2 4" spacers, 2 7" spacers)
11 Button (2 6 button, 2 2 button, 2 1 button, 2 Neo Geo, Defender, Missile Command, Donkey Kong)
26 joystick (2 4-way wico, 2 atari logo, Defender, Donkey Kong, 2 49-way, 2 joust, 2 karate champ, monroe, Mr Do, Pacman, 2 rotary, Sinistar, Tapper, 2 wico 360, 2 wico 8-way 4", 720, Analog Trigger, Tron)
2 spinner (Tempest and Tron)
3 start (Center start buttons, Left side start buttons, and the middle of the Defender layout)
3 trackball (2 3", 1 4")
8 unique (Paperboy, Enduro Racer, GP Rider, Space Harrier, Spy Hunter, Star Wars, Boot Hill, Road Blasters)
5 wheel (3 optical, 1 analog, one full Cart Fury CP with force feedback)
2 shifters (1 2 speed, 1 4 speed)
1 throttle

I did a modular control panel similar to Paul Olsen's. I don't have anywhere near as many controls as he does...

Still working on steering controls, Operation Wolf gun and some other panels. I usually stick to one game for a while and don't swap out panels a lot.
I also have a Defender cabinet with a JROK board in it. I originally went with a multi-game control panel but decided to go with swappable panels for my favorite Williams games for a more authentic experience.

Between the two cabinets I can play the games I really like with a control panel that's close to the original. For other games the modular is good enough. I may add a third cabinet that has a modular control panel that can be swapped out for dedicated control panels or use it just for vertical monitor games. I have also given up on Spy Hunter for now. :(
