Every one I've looked at looks like solo player, alternating turns by player 1 and 2 with no co-op.
Where is the proof that such a mechanic for this machine exists?

I assume you mean the Taito game Flying Shark from 1987 . . .

. . . not the Model Racing game Flying Shark from 1977.

Based on this picture of the Taito control panel, it was two player alternating like Tafoid said.

Maybe you're thinking about a different game. :dunno

Maybe you remember playing it on a cocktail table?
Dipswitch menu in MAME allows you to set cabinet type.
- When the dipswitch is set to "Upright" both players take turns using P1 controls.
- When the dipswitch is set to "Cocktail" each player has their own controls.
Either way, gameplay is alternating, not simultaneous/co-op.

You're thinking of Fire Shark.

You're confusing flying shark with fire shark, as pbj said.
Flying shark is alternating 2 players.
