What is everyone using as a replacement for flourescent marquee lights. On all 3 of my cabinets the bulbs died and I'm sick of replacing them. I'd love something I can just drop in / use existing wiring to light. Any good solutions that are pretty much plug (wire) and play?

There are led bulbs that plug straight into a fluorescent fixture. I use them in my basement overhead light fixtures. I imagine they make them for smaller fixtures. There are also ones that have to be wired to bypass the ballast. Maybe it is an em ballast vs electronic ballast thing. I don't know.
I have over a dozen cabs. I hardly ever have a fluorescent bulb go dead. :dunno

They are a good thing to replace though as the heat and UV rays will damage marquees over time. At least in theory anyway. I'm like you though.... never had one burn out and the one in my original mame cab is around 20 years old.

As the others have said if its burning out regular you have a problem.
It could be it needs a new starter or ballast.
But on the flip side I to would swap it out for a LED fixture.
Under counter kitchen lights usually work well and I have used them a few times.
You will just have to disconnect the old one and wire in the new.

The flickering upon power up and the associated sounds are part of a classic arcade cab.
